Hi guys!! So this recipe was adapted from Laura Vitale! I was curious to know exactly how Kale Pesto would taste like...since I'm so use to basil. LET ME TELL YOU. It taste GREAT! In fact, I actually prefer this because it is actually healthier for you than basil. Kale is such a great source of...well, I don't really know but it's very green (greener, the better!!)! PLEASE make this, you won't regret it!!
1 lb pasta of choice
1/4 cup olive oil (I use less because I'm a health freak)
3 tablespoons walnuts & almonds
1/4 cup parmesan
Salt&Pepper
3 garlic cloves
1 cup cooked kale, smashed into the cup for measurement
Step 1: Boil your kale for 2 minutes until it's bright green. Toss in some salt in the water too! In another pot, cook your pasta as instructed by the packaging.
Step 2: In a food processor, dump in remaining ingredients (except for parmesan) and process away!
Step 3: I like to put in my parmesan in my pasta while it's hot so it melts better than in the food processor. But you can add it to the pesto if you'd like!
Step 5: Add in your pesto and season with salt and pepper!
DONE!
