MMM, I love French onion soup! It's so hearty and it's perfect for fall! I make these little portions for my people :3. Hardest part is just sautéing the onions but everything else is a piece of cake!
6 onions
1/4 cup red wine
2 tsp dried thyme
2 boxes (32 oz each) beef broth
2 bay leaves
1 garlic
1 baguette
1 tablespoon butter
2 tsp olive oil
cheese of your choice!
salt/pepper
Step 1: Melt your butter and put in some olive oil in your pot. Use a dutch oven if you have it because it'll brown the onions evenly! But if not, a regular pot will do fine too =) I know they can be expensive!
Step 2: Saute the onions for about 30 minutes (its worth it!) and in the meantime, cube your baguette to bite-sized pieces and preheat the oven to BROIL!
Step 3: When the onions are browned, add the wine! Let the alcohol evaporate, then add the beef broth, bay leaves, and thyme. Let it simmer for about 15 minutes.
Step 4: Separate the soup into individual oven-safe bowls, top it with the baguette, and sprinkle some cheese on top!! MMMM! Stick it in the oven for about 5-8 minutes until the cheese is melted and delicious and you're finished!!
